  • 1 tsp Italian seasoning
  • ½ tsp kosher salt
  • ¾ tsp black pepper
  • 1 (14.5 oz) can petite diced tomatoes or crushed tomatoes
  • 1 (8 oz) can tomato sauce
  • ¾ cup uncooked rice (white or brown)
  • 12 ounces evaporated milk, cream or half and half
  • ½ cup shredded microbial-rennet parmesan cheese
  • 2 cups coarsely chopped spinach

Instructions

  1. Step: Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions. Brown the sausage for about 5 minutes.
  2. Step: Add in the garlic and cook for 30 seconds.
  3. Step: Pour in the broth and scrape bottom of pot so that nothing is sticking.
  4. Step: Add in carrots, bay leaf, Italian seasoning, salt, pepper, tomatoes, tomato sauce and rice.
